Ingredients
  

Italian sausage
  • 1 lb Italian sausage
Marinara sauce
  • 1 jar (25 oz) marinara sauce
Chicken broth
  • 4 cup chicken broth
Lasagna noodles
  • 8 lasagna noodles Broken into pieces
Ricotta cheese
  • 1 cup ricotta cheese For topping
Optional garnishes
  • 0.5 cup shredded mozzarella Optional
  • 0.5 cup fresh basil Optional
  • 2 tbsp parmesan Optional
Seasoning
  • 0.25 tsp salt If needed
  • 0.25 tsp black pepper If needed

Method
 

Brown the sausage
  1. Brown the Italian sausage in a large pot over medium-high heat, breaking it up. Drain the fat.
Build the soup base
  1. Pour in the marinara sauce and chicken broth, then stir to combine. Keep the pot on the stove.
  2. Bring the mixture to a boil over high heat. Look for active bubbling across the surface.
Cook the noodles
  1. Add the broken lasagna noodles and stir to distribute them evenly. Cook 10-12 minutes until the noodles are tender, stirring occasionally.
  2. Season with salt and black pepper if needed. Taste and adjust before serving.
Serve
  1. Ladle the soup into bowls. Serve immediately while hot.
  2. Top each bowl with a generous spoonful of ricotta cheese. Let it soften slightly in the hot soup.
  3. Optionally top with shredded mozzarella and fresh basil. Add parmesan if using for extra flavor.

Notes

Pro tip: break the lasagna noodles into small pieces so they cook through evenly in the broth. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently on the stovetop or microwave with a splash of broth. Freezing is not recommended because the noodles and ricotta can turn softer after thawing. For a lower-fat option, choose turkey sausage and part-skim ricotta.
