Ingredients
  

Chicken
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 0.75 tsp kosher salt divided
  • 0.25 tsp black pepper divided
Salad
  • 6 cup chopped romaine lettuce
  • 1 cup crushed tortilla chips
  • 0.5 cup grated Parmesan
Caesar-style dressing
  • 0.5 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp hot sauce
  • 2 anchovy fillets, minced or use 1 tsp anchovy paste
  • 1 garlic, minced 1 clove

Method
 

Season and grill the chicken
  1. Season the chicken breasts with olive oil, half the kosher salt, and half the black pepper.
  2. Heat a grill pan over medium-high heat and cook the chicken for 5–6 minutes per side, until golden and the internal temperature reaches 165°F.
  3. Let the chicken rest for 5 minutes, then slice.
Make the spicy Caesar dressing
  1. Whisk together the mayonnaise, lemon juice, Dijon mustard, hot sauce, anchovy fillets, garlic, and the remaining kosher salt and black pepper to make the dressing.
Assemble the salad
  1. Toss the romaine with the dressing until evenly coated.
  2. Top with the sliced chicken, crushed tortilla chips, and Parmesan.
  3. Serve immediately so the tortilla chips stay crisp.

Notes

Pro tip: to keep the crunch, dress the romaine right before serving and add the tortilla chips at the end. Store leftover chicken and undressed romaine separately in the fridge for up to 3 days; assembled salad is best within 24 hours. Freezing isn’t recommended for the salad, but you can freeze cooked chicken for up to 2 months. For a lighter option, use light mayonnaise (and keep the rest the same) to reduce calories while maintaining the creamy texture.
