Method
Season and grill the chicken
- Season the chicken breasts with olive oil, half the kosher salt, and half the black pepper.
- Heat a grill pan over medium-high heat and cook the chicken for 5–6 minutes per side, until golden and the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes, then slice.
Make the spicy Caesar dressing
- Whisk together the mayonnaise, lemon juice, Dijon mustard, hot sauce, anchovy fillets, garlic, and the remaining kosher salt and black pepper to make the dressing.
Assemble the salad
- Toss the romaine with the dressing until evenly coated.
- Top with the sliced chicken, crushed tortilla chips, and Parmesan.
- Serve immediately so the tortilla chips stay crisp.
Notes
Pro tip: to keep the crunch, dress the romaine right before serving and add the tortilla chips at the end. Store leftover chicken and undressed romaine separately in the fridge for up to 3 days; assembled salad is best within 24 hours. Freezing isn’t recommended for the salad, but you can freeze cooked chicken for up to 2 months. For a lighter option, use light mayonnaise (and keep the rest the same) to reduce calories while maintaining the creamy texture.
