Ingredients
  

All-purpose flour

Salt

Granulated sugar
  • 0.75 cup granulated sugar
Eggs

Vegetable oil
  • 0.33 cup vegetable oil
Vanilla extract
  • 1 tsp vanilla extract
Fresh elderberries
  • 1.5 cup fresh elderberries, stems removed Fold into the batter.
Brown sugar (streusel)
  • 0.33 cup packed brown sugar For the streusel.
Unsalted butter (streusel)
  • 3 tbsp cold unsalted butter, cubed Keep cold for coarse crumbs.

Method
 

Prep the oven and muffin tin
  1. Preheat the oven to 375°F and line a 12-cup muffin tin with liners. Make sure the liners are seated so batter doesn’t leak.
Mix the muffin dry ingredients
  1. Whisk together the all-purpose flour, baking powder, salt, and granulated sugar in a bowl. Mix until no dry pockets remain and the sugar looks evenly distributed.
Mix the wet ingredients and combine
  1. Whisk the eggs, milk, vegetable oil, and vanilla extract in a bowl. Pour into the dry ingredients and stir just until combined.
  2. Fold in the fresh elderberries until evenly suspended. Stop when the batter is thick and not overmixed.
Make the streusel topping
  1. Combine the all-purpose flour and packed brown sugar for the streusel. Cut in the cold unsalted butter until coarse crumbs form.
Fill and top the muffins
  1. Divide the batter among the muffin cups. Sprinkle generously with the streusel topping so crumbs cover the tops.
Bake and cool
  1. Bake for 22–25 minutes at 375°F, until a toothpick comes out clean. Look for lightly domed tops with visible streusel browning.
  2. Cool for 5 minutes before transferring to a wire rack. Let them rest until warm, not steaming hot.

Notes

For the best tender crumb, stir the batter only until the flour disappears and fold in elderberries gently to avoid bleeding. Store muffins covered at room temperature up to 2 days or refrigerate up to 4 days; freeze up to 2 months. If using frozen elderberries, thaw and pat very dry first to reduce extra moisture. For a lower-sugar option, reduce granulated sugar to 2/3 cup and use a lightly sweetened streusel (brown sugar stays the same for texture).
